Meatloaf

1 lb ground beef
1 can mixed veggies
½ - 1 bag of saltine crackers
½ c diced onions
¼ c ketchup
1 egg
4 slices bacon

Place ground beef, mixed veggies (including the juice), onions, ketchup, and egg into large bowl. Mix together (I used my mixer on a low setting; when I make it for my family I mix it by hand). Add enough crackers to hold the mixture together (too many and it will be too dry). Mold beef mixture into a loaf size, cover with bacon slices, freeze.

To bake: Thaw in fridge overnight. Place in 9 x 13 pan, bake at 350 degrees for 45 – 60 min, or until meat is no longer pink. I add a tiny amount of water and cook veggies around the meatloaf at the same time. Usually carrots and potatoes.

For potatoes: mixture makes 8 servings

Combine 2 ½ c water, 3 Tb butter, ½ Tb salt in saucepan – bring to a boil. Remove from heat, stir in 1 c milk and potato flakes with a fork until potatoes are desired consistency. For thicker potatoes use less milk, for creamier potatoes stir in additional milk.
