3 Star Honey Apple Pork Chops

This meal was made for me by a sister in my ward who brought it over after the twins were born and I was able to recreate it with a few tweaks because it is sooooo YUMMY I had to have it again!  I'm glad y'all liked it too and you'll be amazed to see just how easy it really is :)

Honey Apple Pork Chops  
Serves 4

Ingredients
4 pork chops, 1 inch thick
   (bone in provides more flavor, bone out = easier)
1 1/2 cup apple cider
1/4 cup lemon juice
1/4 cup soy sauce
2 tablespoon honey
1 garlic clove, minced
1/4 teaspoon pepper
1 (4 oz) package stuffing mix
1 (14 oz) can apple pie filling

Directions
1 - Place top 7 ingredients into a gallon ziplock bag, seal with as little air in bag as possible and place in freezer until ready to use.

2 - Thaw in the fridge overnight

3 - Remove pork chops from marinade and pat dry

4 - In a skillet heat 2 tablespoons vegetable oil over medium high heat and brown pork chops (about 3 minutes on each side)

5 - Prepare stuffing according to package directions

6 - Spread pie filling into a greased 8x8 baking dish

7 - Place the browned pork chops on top and spoon stuffing over chops

8 - Cover and bake @ 350 degrees for 35 minutes

9 - Uncover and bake 10 minutes longer until a meat thermometer reads 160 degrees

10 - ENJOY!!!

**Optional**  You can bring the marinade to a boil in a small saucepan, reduce heat and simmer 15 minutes then drizzle over pork chops once they are placed on top of the apples in the baking dish to add a bit more flavor, if you so desire.

  1. Summer, I did not get this meal although I heard all the raves! :) I'd love to try this for another exchange, but I'm wondering at what point did you prepare it to give out to everyone? Did you bring the pork in the marinade for freezing, and then everyone would thaw & brown it, and then assemble with the apples & stuffing? Or did you have it all in a pan and freeze it that way, ready to go into the oven?

  2. I got the pork chops raw, placed them in z ziploc bag with the marinade and froze it. Then when handing out the meal I provided the stuffing and canned apples. So yes, to make the meal each person had to thaw then brown the chops, make the stuffing and open the can of apples to assemble the meal. A bit more prep work on the back end, but as you can see soooooo worth it!
